Are you fired up for summer? So are we! You’re probably firing up the grill more, too, which is why we want to share one of our favorite summer treats with you. You already know that, at Salsarita’s, we love pineapple in the summer. Not only is it a great source of Vitamin C, but it’s also deliciously sweet and incredibly versatile. Pineapples are not just for fruit salad anymore! You can serve it in tacos, on fish, with cheese, in salsas, and, as we’re going to talk about today, you can even grill it. So how do you grill pineapple? First, you peel, core and cut your pineapple into rings. Then, you place the pineapple rings into a large plastic baggie and toss them in the ingredients of your choice. You can use anything from honey to butter to even hot sauce! Let your pineapple marinate for at least half an hour. (We know, we know; marinate and pineapple in the same sentence has a weird ring to it, doesn’t it? But trust us…it’s delish.) Then preheat your grill to high heat. Once the grill is hot, put the pineapple rings on it, and grill each side for about 3 minutes or until you see grill marks. OR, if you’d prefer, you can also cut the pineapple into smaller pieces, and grill them on skewers instead. Grilled pineapple is great paired with fish, on a salad or even just eaten on its own.
